Dark but sound vegetables in Yunnan

A saying about vegetables goes in Yunnan: "The darker the vegetable is, the more nutrients it contains." As a kingdom of plants, Yunnan boasts many black vegetables. Here we recommend three of them.
1. Black garlic contains plenty of antioxidant ingredient and it can be found in central Yunnan’s Chuxiong Yi Autonomous Prefecture.
2. Black truffle produced in northwest Yunnan’s Lijiang City was proved containing abundant protein, amino acid, and others. 
3. Purple carrot, which is common in Yunnan, can be cooked or eaten raw. It is rich in anthocyanin and renieratene.
